2½ c. Quick Oats (uncooked)
2 tsp. double action baking powder
1 c. dark brown sugar (packed in cup)
½ c. melted margarine or oil
1 beaten egg
½ tsp. almond flavor (if desired)

Directions:
Directions:
Blend dry ingredients and add melted margarine or oil. Add beaten egg and mix well. Add flavoring if used. Drop from teaspoon on greased cookie sheet, leaving plenty of room for them to spread. Bake at 350º F about 10 minutes. Let stand a minute or so before removing from pan with a broad spatula.
If too hard, reheat in over for a minute.

They are truly like lace, almost flat, and thin and crispy at the edges. They are very lady like. The recipe was one of Ruth Mainland’s favorites. A dear child hood friend of mine, Cheryl Gyrion Holman, often makes them when I visit, and we both travel down memory lane together.
