3 lbs chicken tenders

Batter

6 eggs
2 tbsp mayonnaise
2 tsp dijon mustard
2 tsp salt
1 tbsp garlic powder
1/4 tsp Black pepper

Flour Mix

2 cup flour
1 tbsp salt
2 tsp black pepper
2 tbsp garlic powder
2 tap onion powder
1 tbsp paprika
1 tbsp Italian seasoning

Breading

1 cup panko bread crumbs
1 cup garlic & herb bread crumbs (such as Progresso)
1 cup Parmesan cheese
1 tbsp salt

Directions:

Preheat oven to 400 degrees F.

Line a baking sheet with parchment paper and set it aside.

Whisk together the flour, salt and pepper, paprika, garlic powder, and onion powder in a shallow dish or pie pan.

In another shallow dish, beat the eggs with the other ingredients lightly.

In a third dish, whisk together the Parmesan, breadcrumbs and panko breadcrumbs.

Dip each chicken strip in the flour mixture, then in the egg mixture, then toss in the bread crumbs mixture. Place on the prepared baking sheet.
Spray each of the chicken strips lightly with cooking spray.

Bake in the preheated oven for 20 minutes, flip and cook for another 20 minutes until golden brown and cooked through. According to USDA, poultry is safe to consume when its internal temperature reaches 165 degrees F.
