1 c. raw (or 2 c. cooked) rice
1 egg
2 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
1/4 lb. yellow cheese
1/2 c. bread crumbs

Directions:
Directions:
Cook rice, drain and cool slightly. Add egg, seasoning and flour. Chill, the shape into balls around 1/2". Cube cheese...roll into crumbs and fry at 365º for 2-4 minutes.

The sauce:
2 T. crisco
2T. minced green pepper
1T. minced onion
2 T. grated carrots
1T. flour
1c. milk
1/2 tsp. salt
1/8 tsp.. pepper
1tsp. vinegar

The Sauce: Melt crisco in frying pan. Cook green pepper, onions and carrots slowly until tender. Stir in 1 tbsp. flour. Add 1 c. milk. Cook until slightly thickened. Add 1/2 tsp. salt and 1/8 tsp. pepper and vinegar. Pour over the balls.
