1 cup Vegetable Oil
1 cup Flour
8 stalks Celery, chopped
3 large Onions, chopped
1 Green Pepper, chopped
2 cloves Garlic, minced
1/2 cup Fresh Parsley, chopped
1 lb Okra, sliced
2 Tbsp Shortening
2 qts Chicken Stock
2 qts Water
1/2 cup worcestershire Sauce
Tabasco to taste
1/2 cup Catsup
1 large Tomato, chopped
1 Tbsp Salt
4 slices Bacon or 1 large slice ham, chopped
1-2 Bay Leaves
1/4 tsp dried whole Thyme
1/4 tsp dried whole Rosemary
Red Pepper Flakes
2 cups Chicken, cooked and chopped
1-2 lbs fresh Crabmeat
4 lbs Shrimp, peeled and de-veined
1 tsp Molasses or Brown Sugar
1 pint Oysters (optional, added just before serving)

Directions:
Directions:
Stir roux over low heat for 30 minutes until copper colored.

Add celery thru parsley to roux and cook for 45-60 minutes.

Fry Okra in shortening and add to stew.

Add above and simmer for 2 1/2 - 3 hours. About 30 minutes before serving, add rest.

Just before serving, add 1 pint of Oysters, if desired.

Serve over rice.
