Ingredients: 1 lb. dark brown sugar 4 whole eggs 1 tsp. cinnamon 1/2 tsp. ground cloves 1 T. cocoa 2 C. flour
Icing: 1 C.confectioner's sugar 2 T.hot water 1 T. lemon juice
slivered blanched almonds for decoration candied red cherries, cut in half

Directions:Mix together all cake ingredients. Bake in a greased 8" X 8" pan or 8" layer cake pan at 350 degrees for 30 minutes or more. Test at that point .You might need to bake it for 5 or more minutes longer---watch carefully.It cooks fast and be careful not to dry it out.Take out of oven when it is still A LITTLE moist in the middle.
Icing: Make a glaze from confectioner's sugar,lemon juice and water and put on while cake is hot. Before icing dries, decorate with almonds at curved edge on round pan-------place half of cherry in center of what will be a slice and three almond pieces radiating out from cherry to imaginary triangle points.
Cool completely before cutting. |
