4 eggs
2 cups milk (non-fat, reduced fat or whole milk)
1-1/3 cups of all purpose flour
1/4 cup of avocado oil
1 tablespoon sugar
1/3 teaspoon salt
Butter to grease pan

Directions:
Directions:
Start by adding eggs, sugar, salt, oil, flour and 1 cup milk into a bowl. Whisk everything together until well combined. Add remaining cup of milk and whisk again until completely mixed and lump free.

Heat frying pan over medium high heat and lightly grease with butter for the first crepe only. Pour 1/4 cup of batter onto pan, swirling to spread evenly. Cook for 1 minute on each side until lightly golden brown. For the remaining crepes, there is no need for additional butter in pan. Just pour batter and cook as before.

VARIATIONS:

For sweet crepes add Nutella, fruit, jams, cinnamon sugar, etc.

For a savory crepe add herbs of your choice such as basil, parsley, chives, etc.
