8 oz. (2 cups) pecans
1 T. sugar
2 T. olive oil
1/8 tsp. ground allspice
1 MacIntosh apple
3 medium Belgian endive
1 head radicchio

DRESSING

3 T. olive oil
1 tsp. cider vinegar
1 tsp. raspberry vinegar
2 oz. blue cheese crumbles

Directions:
Directions:
Preheat oven to 350 degrees.

Combine sugar and 1 T. water in a medium bowl and
microwave for 15 seconds on high or until the sugar is
dissolved.

To the sugar mixture, add the pecans, 2 T. olive oil, 1/4 tsp.
salt, dah of pepper and allspice. Toss to combine.

Spread the pecans in a single layer on a baking sheet and
bake for 5-10 minutes or until the pecans are fragrant and
begin to brown. Remove the pecans and let cool.

Core the apple and cut into thin slices and put in a large bowl.

Trim off the root end of the endive, tear the leaves into bite-
sized pieces into the bowl.

Trim off the root end of the radicchio, tear the leaves into bite-
sized pieces into the bowl.

Toss in the pecans.

In a separate bowl, mix the olive oil, cider viegar, raspberrry
vinegar, 1/2 tsp. salt and pepper. Then pour over the salad and
toss.

Sprinkle in the blue cheese.
