4 grapefruit
4 avocados
3 heads of Bibb or Boston lettuce
1 pomergrante
1/2 cup olive oil
1 T tarragon vinegar
1 T. cider vinegar
1 tsp. or less salt
1/2 tsp. dry mustard
1/2 to 1 tsp. paprika

Directions:
Directions:
Peel avocado, cut into thin strips.

Use a fork to peel the grapefruit by placing a tin under the skin
and cutting first through the equator and then from pole to pole.

Use scissors to cut off the skin of each grapefruit section.

Mix dry ingredients in a blender or whisk by hand.

Add vinegar and mix well, then add oil veryslowly until it beats
up thick.

Chill and beat again before serving.

Arrange lettuce on the plates and alternate grapefruit sections
and avocado on the lettuce.

Sprinkle with pomegranate seeds.

Shake the dressing and pour over salad.
