3/4 c. granulated sugar
8 T. butter (1 stick)
2 T. water
1 c. semisweet chocolate chips
1 1/2 t. vanilla extract
2 large eggs
1 1/4 c. all purpose flour
1/2 t. baking soda
1/2 t. salt
1 c. mint chocolate chips
Confectioners' sugar, optional

Directions:
Preheat the oven to 350º. Grease 9-inch square baking pan. Combine sugar, butter and water in medium microwavable bowl.

Microwave on HIGH until the butter is melted 2 1/2-3 minutes.

Stir in semisweet chocolate chips; stir chips gently until chips are melted and mixture is well blended. Stir in vanilla; let stand 5 minutes to cool.

Beat eggs into chocolate mixture, one at a time. Combine flour, baking soda and salt in small bowl; add to chocolate mixture.

Stir in mint chocolate chips. Spread batter in prepared pan. Bake 25 minutes for fudgy brownies or 30 minutes for cakelike brownies.

Remove pan to wire rack and cool completely. Cut into 2 1/4-inch squares. Sprinkle brownies with confectioners' sugar, if desired.
