1 cup all purpose flour
2 tsp. sugar
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 cup buttermilk
1/4 cup milk
1 large egg, separated
2 T butter
Vegetable oil or Pam spray for griddle

Mix dry ingredients in a large bowl.

Pour buttermilk and milk into a 2-cup measuring cup.

Whisk in the egg white.

Microwave the butter until melted, mix in egg yolk, then stir into
the milk mixture.

Dump wet ingredients into dry ingredients and whisk until just
mixed. About a dozen stirs. Don't overdo it.

Spread light coating of oil on griddle then heat over strong
medium-high heat.

When water spashed on the surface sizzles, ladle about 1/4
cup of batter at a time.

When pancake bottoms are brown and the top surface starts
to bubble, 2-3 minutes, flip them.

Cook until remaining side has browned, about 1-2 minutes.
