1/2 cup (1 stick) unsalted butter, room temperature
1 cup packed light brown sugar
1 cup old fashion oats
1 tbsp plus 1 tsp all purpose flour
1/2 tsp fine salt
1 large egg, room temperature
1 tsp vanilla extract or vanilla bean paste

1. Preheat oven to 375º F and line 4 large baking sheets with silicone baking mats or parchment paper.
2. Add butter and brown sugur to a large frying pan and heat over medium heat. Stir frequently until the butter has fully melted and the mixture is smooth with no clumps of brown sugar remaining. Remove from heat.
3. Stir in the oats, flour and salt. Mix until the oats are fully covered with the brown sugar and butter mixture.
4. Mix in the egg and vanilla extract. Stir until fully incorporated. Batter should be a little soupy and thin.
5. Drop 1 teaspoon of cookie batter onto the prepared baking sheets for each cookie, leaving at least 2 inches between each one.
6. Bake two trays at a time for 5-7 minutes, until the edges are just starting to brown. Rotate in the next trays as soon as the first ones are done.
7. If needed, reshape the cookies into circles while they are still warm using a large round cutter or glass.
8. Let cookies cool on the sheets for 15 minutes, then transfer to wire racks to cool completely. Repeat with remaining batter.
9. Store at room temperature in an airtight container for up to 5 days or freeze in a airtight container or freezer bags for up to a month.
