2 3/4 cups all purpose flour
2 tsp. cream of tartar
1tsp baking soda
1/2 tsp salt
1 cup unsalted butter, just softened
1 1/2 cups sugar
2 eggs
1 tsp. vanilla extract
*the recipe did not call for this but I added 1/2 to 1 tsp cornstarch. this helps cookies from spreading and makes them chewier**

Cinnamon Sugar Coating
1/3 cup sugar
2 Tbsp cinnamon

Preheat oven to 350 degrees F.

In a large bowl mix flour, cream of tartar, baking soda, salt and cornstarch if using. Set aside.

In a stand mixer, cream together butter (barely softened), and sugar. Add eggs and vanilla and blend well. Add dry ingredients to wet ingredients and mix well. In a small bowl, combine 1/3 cup sugar and 2 Tablespoons cinnamon. Use a small cookie scoop to scoop out dough and roll it into a ball. Roll each ball twice in the cinnamon sugar mixture....yep twice.

Place balls 2 inches apart o-n an ungreased cookie sheet. I use parchment paper to line my cookie sheets. Bake for 8-10 minutes....I think I went about 11....depending on your oven. Let sit on the cookies sheet for a few additional minutes before removing to a wire rack to cool.

This is the first Snickerdoodle recipe that I have had success with. Most of the time they puff up, spread out, and are a huge mess....the double coating of cinnamon sugar makes a huge difference...don't shortcut this step!
