½ cups onion, chopped
½ cups celery, chopped
1 clove garlic, minced
3 tablespoons salad oil
16 ounces can whole tomatoes (1 lb)
8 ounces can tomato sauce
1½ teaspoons salt
1 teaspoons sugar
½ teaspoons chili powder (½ to 1 tsp)
1 tablespoons Worcestershire sauce
1 dash hot pepper sauce
2 teaspoons cornstarch
1 tablespoons cold water
12 ounces clean raw shrimp
½ cups green pepper, chopped
1 cups cooked rice, for serving

Directions:
Sauté the vegetables: Cook ½ cups onion, chopped, ½ cups celery, chopped, and 1 clove garlic, minced in 3 tablespoons salad oil over medium heat until tender but not browned.

Build the sauce: Add 16 ounces can whole tomatoes (1 lb), 8 ounces can tomato sauce, 1.5 teaspoons salt, 1 teaspoons sugar, 0.8 teaspoons chili powder (½ to 1 tsp), 1 tablespoons Worcestershire sauce, and 1 dash hot pepper sauce. Simmer covered for 45 minutes


Thicken with cornstarch: Mix 2 teaspoons cornstarch with 1 tablespoon cold water until smooth. Stir into the sauce and cook, stirring, until the mixture bubbles and thickens.

Add shrimp & green pepper: Add 12 ounces clean raw shrimp and ½ cups green pepper, chopped. Cover and simmer until shrimp are done, about 5 minutes

Serve over rice: Serve over 1 cup cooked rice, for serving.

• Cook the vegetables until tender but not browned — you want a soft, sweet base for the sauce.
• The cornstarch slurry thickens the sauce beautifully — stir it in and wait for it to bubble before adding the shrimp.
• Shrimp cook quickly — 5 minutes is plenty. Overcooking makes them rubbery.
• Serve over white rice to soak up all that wonderful sauce.
