1/2 cup unsalted/salted butter
1/3 cup olive oil
2 tbsp roughly chopped fresh thyme leaves or 1/4 cup of flat leave parsley
Loaf of day old french bread - diced into 1/2 inch pieces
1 tsp garlic powder
3/4 tsp kosher salt
fresh finely ground black pepper



OPTIONAL: chopped flat leave parsley

PREHEAT OVEN 375º - TOAST FOR 14-18 MINUTES

1) Melt the butter in a small saucepan over low heat, then remove the saucepan from the heat, pour in the olive oil and add the thyme. Stir. Toss the bread crumbs in a large bowl with the butter/oil mixture until evenly coated. Sprinkle the garlic powder and the salt evenly over the bread cubes and toss.

2) Arrange the bread cubes evenly on a rimmed baking sheet. Freshly crack black pepper over them and bake until toasted and lightly golden, 14 to 18 minutes, tossing halfway through the bake time. Remove the baking sheet from the oven, toss the bread cubes and let them cool.


OPTIONAL: Spread parmesan cheese before baking.
