1½ c warm water OR 2¼ c OR 2¼ c
1 pkt dry yeast OR 1 pkt OR 4gm + 2gm later
1 tbs brown sugar OR 2 tbs OR 30 gm honey
4½ c flour OR 6½ c OR 450gm + 375gm later
2 tsp salt© OR 2 tsp Kosher OR 15gm

NB: There are three recipes here. The second uses barley malt syrup instead of brown sugar and the third uses honey instead of sugar/barley malt.

1. Proof yeast in water/sugar mixture
2. Add dry ingredients and mix with dough hook (or mix by hand) x 10-12 minutes
3. Cover and let rest x 1 hour
4. Prepare baking sheet with parchment paper slightly oiled
5. Divide dough into 8 pieces (110 gm) and roll into ball shape
6. Lightly flatten, punch hole in middle and enlarge to about 1"
7. Cover x 30 minutes OR place in fridge overnight
8. Place in boiling water with 3 tbs brown sugar & 1 tbs baking soda x 1 minute per side
9. Sprinkle top with cheese/sesame seeds/etc.
10. Bake @ 425º x 15-20 minutes, flip over and bake an additional 10 minutes or turn off oven and allow to rest in oven for those 10 minute
