1 cup dried Cranberries
water to cover berries
3 large eggs
1 cup full fat cottage cheese
1/4 c milk
1/4 c maple syrup
1 c rolled oats
2 tsp cinnamon
2/3 c chopped walnuts
salt

Directions:
Directions:
1. place dried cranberries in a bowl with enough water to cover. microwave on high for
minutes. Drain and allow to cool.

2. Preheat the oven to 350 F. Grease 12 muffin cups

3. Beat eggs in a large bowl until whites are incorporated. Stir in cottage cheese, milk
and maple syrup.

4 Add remainder of ingredients

5 Bake for 25 - 37 minutes. Remove from oven and allow to cool on rack for 10 minutes before removing from tin
