1 c sugar
2/3 c pumpkin or squash
1 t lemon juice
2 t cinnamon
1/4 t salt
1 t nutmeg
1 t ginger
1 t baking powdered
3/4 c flour

filling
1 c powdered sugar
8oz. cream cheese
4 T butter
1/2 t vanilla

Directions:

mix eggs,pumpkin,sugar and lemon juice with a mixer with a mixer for 5 minutes. add rest of the ingredients and mix well. pour in a greased floured jelly roll pan. bake at 375 degrees for 15 minutes. tip upside down on a towel sprinkled with chopped walnuts or powdered sugar. roll up, the towel holding it to cool.

filling:
beat sugar, cream cheese, butter and vanilla together. spread mixture on unroll cake, saving 3 T. roll up and spread remaining filling on top.
