Boneless skinless chicken thighs
1 cup buttermilk.
½ tsp salt
½ tsp paprika (or smoked paprika)
½ tsp Bells Seasoning
½ tsp garlic powder
½ tsp onion powder
½ tsp pepper

Breading:
⅔ cup panko (or regular breadcrumbs)
½ cup cornflakes, crushed by hand
2 Tbsp grated parmesan
1½ tsp salt
1½ tsp paprika (or smoked paprika)
½ tsp chili powder
½ tsp garlic powder
½ tsp onion powder

Directions:
Directions:
Combine buttermilk with next 6 ingredients and marinate the chicken overnight, the longer the better. Combine the breading ingredients and coat the chicken. Put it on a sprayed cooking tray. Use the cooking spray to spray the tops of the chicken. Bake for 45-50 minutes (depending on the size of the chicken pieces) at 400º

Absolutely Jackson and Alex's favorite and they request it at least twice a week! Becky likes to serve this with mashed potatoes (that Jackson hates) and roasted corn (that everyone likes but still complain because it's a vegetable!)

You can use any part of the chicken; the boys just prefer the thigh.
Becky keeps the powdered buttermilk on hand as it lasts longer.
