2 tbsp. olive oil
1 lb. chicken breast (be smart, buy a rotisserie chicken at the grocery store)
1 clove garlic, minced
1/2 cup onion, diced
1/2 cup carrots, diced
1/4 tsp. dried sage
1 tsp. dried parsley
1/2 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. pepper
32 oz. chicken broth
16 oz. water
1 cup orzo pasta
8 oz. heavy cream
1/4 cup green onions, diced (Optional)

1. In a large pan or dutch oven, heat olive oil over medium heat. Add chicken breast and season with salt and pepper, to taste. Cook until no longer pink in the middle, about 6-8 minutes per side. You can eliminate this step if using rotisserie chicken.
Remove from heat and shred.
2. In the same pan, add garlic, onions and carrots and cook for about 5 minutes until aromatic. Add in sage, parsley, oregano, salt and pepper and cook until onions are translucent, another 3-5 minutes.
3. Pour in chicken broth and water and bring to a boil. Add in orzo and cook on a low boil for about 10 minutes until orzo is tender. Lower heat and add chicken back in, and heavy cream. Let simmer 5 minutes until bubbly and thickened.
4. Top with green onions and serve warm!

Another great soup found online by Erin. This one is really, really good. Using rotisserie chicken instead of cooking breasts makes it sooo easy. Plus, you can count on the rotisserie chicken to be tender. Just shred it.
