3 egg yokes
1 Tablespoon lemon juice
1 teaspoon Dijon or spicy mustard
1/4 teaspoon salt
1 pinch smoked paprika
1 stick (1/2 cup) unsalted butter

Directions:

1.Melt butter till hot and set aside
2.In a separate bowl add the egg yolks, lemon juice, mustard, salt, paprika and blend on high speed for 10-15 seconds.
3.With the blender running on medium, slowly stream in the hot butter till well blended.
4.Serve warm.
