2 5oz. containers of baby spinach rinsed and dried
1 lb. fresh strawberries rinsed and halved
1 can mandarin oranges drained
1 1/2 cup toasted pecans
4 oz feta or goat cheese crumbles
DRESSING:
1/4 cup lemon juice
3 T honey
1 T apple cider vinegar
1 T poppy seeds
2 tsp Dijon mustard
1/2 tsp salt
1/4 tsp pepper

Whisk dressing vigorously, pour over other ingredients and toss to coat well.
