1-2 bell pepper
1-2 large onion
5 celery stalks
1/4 teaspoon garlic, minced
10 cups broth
2 boxes-Tony's, Louisiana or Zatarain's Gumbo Mix
2-3 pounds chicken (I use thighs or rotisserie)
2 smoked sausage (I use Conecuh)-thin slice & brown for flavor
1-2 Pkg crawfish tails
2 pkg small shrimp cooked, peeled and deveined
1 pound crab meat (optional)
1-2 Pkg frozen Gumbo vegetables
Rotel (optional)
Creole season to taste

Directions:
Add rice to rice cooker while this is simmering.

In a stockpot add box gumbo mix and cook according to directions. In skillet saute onion, and bell pepper and garlic. Thin slice and saute sausages. Add all vegetables to stockpot. Add broth to your stockpot you preference as to how soupy or thick. Bring to a boil. Add all meat. Simmer for 10-15 minutes on low.Ladle over rice. Serve with Club Crackers or Jalapeno Cornbread.
