½ c oil
½ c flour
¾ c chopped onions
3 oz can tomato paste
6 Tbsp chopped bell pepper
5 c hot water
1 lb seafood
½ tsp salt
¼ tsp black pepper
1 bay leaf (if desired)

Directions:
Directions:
Heat the oil in heavy 6 qt pot. Add flour and cook until flour is dark brown. Add the onions. Continue cooking for 10 minutes. Add the bell pepper, tomato paste, hot water, seafood, salt, pepper, and bay leaf. Simmer over a low heat for 30 minutes. Season to your preference. Serve over rice. Bon appetit!
