Gumbo Recipe

Roux
Boneless, skinless chicken breasts and thighs
Sausage
3-4 stalks celery, chopped
1-2 large onions, chopped
Oil to saute’ vegetables
Hot water
1 t Salt,
1 t pepper
1-2 t gumbo file’
Rice for serving

Directions:
Directions:
Saute’ onions and celery in oil.
Add as much hot water as you want to make.
Add roux a spoonful at a time until desolved and is the desired color and consistency. ( maybe a half jar or more- I like mine dark so that you cannot see through it in the spoon)
Let cook for 30 minutes or so then add chicken, sausage, salt, pepper and file’.
Let simmer for an hour or so and serve over rice.
