6 catfish fillets, about 2 pounds or boneless chicken breast or thighs. See notes below.
1 1/2 cups yellow cornmeal
1/2 cup gluten free flour
1 tbsp garlic powder
1 tbsp onion powder
1 tsp old bay seasoning
1 tsp southwest, or Cajun seasoning
1 1/2 cup buttermilk
2 large eggs
2 tsp hot sauce
Cooking oil spray

Directions:
Directions:
Preheat oven to 425º
Line a baking sheet with foil place a cooling rack on pan and spray with cooking oil
Mix together dry Ingredients for dredge.
Mix together wet ingredients for dredge.
Pat fish dry.
Dredge fish in wet, then dry dredge.
Place fish on rack.
Bake 25 - 30 minutes.

If using boneless chicken breast, Reduce heat to 375, spray chicken with oil after placing on rack to increase Browning and not dry out the chicken.
