1 frying chicken 3-5 pounds

Coating:
3/4 cup flour
3/4 cup cornstarch
1/2 cup baking powder
2 tablespoons salt
4 tablespoons Cajun seasoning
3 tablespoons smoked paprika
2 tablespoons black pepper
1 tablespoon white pepper
1 tablespoon garlic powder

Directions:
Directions:
Cut up chicken. Mix all coating ingredients together and coat chicken. In a deep heavy cast iron frying pan, heat oil to 350 degrees. Add chicken and turn checken every 4-5 minutes while maintaining oil temperature between 325 and 350 degrees. Cook chicken for approximately 10 minutes. Let rest 5 minutes
