1 10- inch skillet cooked cornbread (homemade or purchased)
8 slices crisp fried bacon, crumbled
2 large tomatoes, peeled and chopped
2 bunches green onion, chopped, using part of the green
1/2 green bell pepper, chopped
1/2 red pepper, chopped
Salt and black pepper to taste
1 (17-oz) can cream style corn
1/2 to 3/4 cup mayonnaise (no substitution)
1 tablespoon prepared mustard
Creole seasoning to taste (optional)

Directions:
Directions:
Crumble cornbread and bacon in a large mixing bowl. Toss lightly.
Add remaining ingredients.
Add mayonnaise in small portions mixing after each addition until the salad is moist but not soggy.
Place salad in a large container with tight fitting lid.
Refrigerate overnight to allow flavors to blend.

One of the most unique and unusual salads served at the cafe is Old Fashion Cornbread Salad. This recipe has been featured in the Houston Post and the San Antonio Express News. The cornbread recipe that I use to prepare this salad can be found in the bread section of this book. The most common mistake in making this recipe is adding too much mayonnaise.
