Traditional Irish Colcannon Recipe

4 lbs russet potatoes, peeled and diced for mashing
1 head green cabbage, thinly sliced
6 green onions, rough chopped
1˝ c milk or half and halt
10 Tbsp butter

Directions:
Boil potatoes in salted water until fork tender, about 25 minutes. Drain and dry, return to pot.

Boil shredded cabbage in salted water, 5-6 minutes. Drain, dry, return to pot and sauté in 1-2 Tbsp butter, just to coat.

In small saucepan, simmer milk with green onions and 4 Tbsp butter to saturate milk with flavor. Do not let the milk scald. Set aside.

Mash potatoes. Add 2 Tbsp butter to the mash. Stir in cabbage, then milk mixture.
Season with salt and pepper to taste.

To serve, make a well in center of colcannon and add a generous pat of butter.
