- ½ cup kimchi, drained of its juice and chopped finely
- ¼ cup kimchi juice, reserved from the above
- 2 tsp gochujang
- 1 tsp soy sauce
- 2 tsp sesame oil
- 1 Tbsp vegetable oil
- 2 cups leftover rice, dried in the refrigerator overnight
- 4 scallions, sliced thin
- 4 eggs

- Spread the rice on a foil covered baking sheet in a layer and dry overnight in the refrigerator
- Just before cooking pour sesame oil over the rice, and break up any clumps, distributing the oil across all of the rice evenly
- Heat vegetable oil in the wok over high heat
- Add kimchi and scallion whites to hot wok and cook for 3-5 minutes until beginning to brown
- Add rice to the wok and toss with kimchi to coat. cook 5-10 mins until some rice begins to brown lightly
- Mix the kimchi juice, gochujang, and soy sauce.
- Pour sauce around the outside of the wok and toss thoroughly with the rice
- Toss scallion greens with the rice off heat
- Serve with eggs cooked over-easy
