1 lb ground beef or chicken, cooked & well drained
40 egg roll wrappers
1 small can water chestnuts, chopped
1 can french style green beans, drained
1/2 cup shredded carrots
1 LB fresh bean sprouts
1/2 package of coleslaw cabbage
1/2 cup finely chopped onions
2 TB minced garlic
2 TB soy sauce
2 TB all purpose flour
Peanut oil

Directions:

Combine all ingredients in a large bowl.
Drain & cool completely (this is very important)
Place a heaping TB of mixture in to the center of egg roll wrappers.
(Keep wrappers covered by a damp paper towel to prevent drying out)
Fold bottom over filling, fold sides towards the middle
In a small bowl, mix flour with water to make a paste.
Moisten top corner with paste & roll up tightly to seal.
Repeat until all mixture or wrappers are used up.
Heat oil to 375º. Fry rolls 3 to 5 minutes or until golden brown
Egg rolls should resemble cigars.
Avoid over filling.

Diane suggests making mixture & let drain over night so it drains thoroughly.
Be very careful how you roll them & make sure they are well sealed.
