Grilled Mahi-Mahi Brochettes Recipe

1 1/2 lb. Mahi-mahi, skinned (amberjack also works)
8 bay leaves (soaked in water for 30 minutes)
2 limes
2 lemons
4 T olive oil
1 garlic clove, crushed
Salt and pepper
Wooden skewers (soaked in water for 30 minutes)

Directions:
Directions:
Cut fish into large cubes and place in a small bowl

In a separate bowl, squeeze the juice from half a lime and half a
lemon.
Whisk in olive oil
Add crushed garlic, salt and pepper
Pour mixture over fish and toss
Marinate for 30 minutes, covered in the refigerator

Cut remaining lemon and lime into eight pieces each

Heat grill for 20 minutes

Drain the skewers and bay leaves
Take the skewers and alternate a fish cube with lemon and
lime wedges and bay leaf.

Grill for 8 minutes, turning every two minutes

Mahi-mahi has a steak-like texture and tastes great with the
