- 1 small onion, diced
- 1 clove garlic, minced
- 1 tsp grated ginger
- 1˝ Tbsp curry powder, add a bit of cardamom, clove, or nigella if desired
- 2 Tbsp tomato paste
- 1 can white beans (cannellini, great northern, or navy)
- 1 bunch cilantro, minced
- juice of 1 lemon
- Sourdough bread
- butter

Directions:
Directions:
- Sauté the onion, garlic, and ginger until beginning to brown on the edges.
- Toast the curry paste along with the onions for 30 sec
- Add tomato paste, beans with their juice, vinegar, honey, and ⅓ cup water
- Simmer for 10 mins
- Add lemon juice and cilantro
- Serve with buttered sourdough toast for dipping
