- 3 cups French Fried Onions
- 2 Tbsp butter
- Salt and Pepper

Casserole:
- 2 lb green beans, ends trimmed and cut bite sized
- 24 oz fresh mushrooms, fully minced in a food processor
- ½ oz dried porcini mushroom
- 6 Tbsp butter
- 1 med onion, diced
- 3 cloves garlic, minced
- ¼ tsp pepper
- ½ cup white wine
- 2 Tbsp minced fresh thyme or 2 tsp dried thyme
- 2 Tbsp AP Flour
- 1 cup chicken broth
- 2 cups heavy cream

- Preheat oven to 375ºF
- Boil a large pot of salted water.
- Blanche beans 4-5 mins then shock in ice cold water
- Soak porcini in 1/4 cup hot water and microwave 30 sec
- Remove porcini from water and mince
- Melt butter in the skillet over med-high heat.
- Add mushrooms and onions and cook until all water is evaporated and the butter sizzles
- Add wine and cook until evaporated
- Add flour and cook 1-2 mins.
- Slowly add broth and cream, whisking to prevent lumps
- Reduce heat to med-low and simmer 15 mins
- Place drained beans in a 13x9 pan and pour over the mushroom mix. Stir
- Add topping and cook until golden and bubbly, about 15 mins
