1/2 cup softened butter
1/2 cup shortening
1 cup sugar
1 cup brown sugar
1 cup creamy peanut butter
2 large eggs
1 tsp vanilla extract
2 1/2 cups flour
2 teaspoons baking soda
1/2 tsp salt

Peanut Butter Filling:
1/2 cup softened butter
1/2 cup creamy peanut butter
1 teaspoon vanilla
1/2 teaspoon salt
2 cups powdered sugar
approximately 3 T heavy cream or milk

Directions:
Directions:
Preheat oven to 350 degrees. In a large bowl, combine butter, sugar and peanut butter until very creamy. Add eggs and vanilla and mix well. Mix the dry ingredients together in a separate bowl and then combine with batter. Scoop the dough onto parchment-lined baking sheets. Bake 9-10 minutes or until edges are lightly browned. Let the tray rest for one minute and then remove cookies to wire rack to complete cooling. When cool, pipe or scoop frosting between two cookies.

Filling: Beat butter and peanut butter until creamy. Add vanilla, salt and powdered sugar. Add cream or milk until spreading consistency. Mix on high speed two minutes.

While the recipe suggested peanut butter filling, I used my Grandmom's Whipped Cream icing instead the first time I made these. That recipe is also in this cookbook.

The site that posted this recipe also suggested using chocolate frosting.
