1 whole chicken cut into pieces (or 8 pieces)

For Marinade:

2 cups buttermilk

1 tbsp hot sauce

1 tsp salt

1 tsp black pepper

1 tsp garlic powder

For Flour Coating:

2 cups all-purpose flour

1 tbsp cornstarch

1 tbsp paprika

1 tsp cayenne pepper

1 tsp garlic powder

1 tsp onion powder

1 tsp black pepper

1 tsp salt

˝ tsp dried thyme

˝ tsp dried oregano

Vegetable oil (for deep frying)

In a bowl mix buttermilk, hot sauce, salt, pepper, and garlic powder.

Add chicken pieces and coat well.

Cover and refrigerate at least 4 hours (overnight is best).

In another bowl mix flour, cornstarch, paprika, cayenne, garlic powder, onion powder, salt, pepper, thyme, and oregano.

Remove chicken from marinade.

Dip into flour mixture.

Dip again lightly in buttermilk mixture.

Coat again in flour mixture (this double coating makes it extra crispy).

Heat oil to 170–175°C (340°F).

Fry chicken for 12–15 minutes until golden brown and fully cooked.

Place on a rack or paper towels for 5 minutes.

Add a little MSG (optional) for restaurant flavor.

Use peanut oil if possible.

Let coated chicken rest 10 minutes before frying for better crust.
