Shepherd Pie Soup Recipe

2 lbs potatoes
1 Tbsp butter
1 lb ground ground beef or turkey( or combo)
1 large sweet onion diced
5 celery ribs finely chopped
4 garlic cloves minced
1 Tbsp Italian seasoning
2 tsps dried thyme
12 oz mixed frozen vegetables
6 cups chicken or beef bone broth
1 cup sour cream, at room temperature
Salt/pepper to taste
Optional Toppings:
chopped green onions for topping
shredded cheddar cheese topping
freshly chopped parsley for topping

Directions:
Directions:
1)Set the Greek sour cream and mixed frozen vegetables out for about 15 minutes to help them blend smoothly into the hot soup later on.

2)Place the cubed potatoes in salted water and cook until tender, about 20 minutes. Drain well, keeping half of them aside for later.
In the same pot, add the remaining drained potatoes back, and mix in butter. Mash until creamy, seasoning lightly with sea salt and black pepper.

3)In a large stockpot sauté your choice of ground meat over medium-high heat until browned, using a wooden spoon to break it up.
Remove excess grease, then stir in diced onion, chopped celery, minced garlic, Italian seasoning, and thyme. Cook for about 5 minutes until the veggies soften.
Toss in the warmed frozen vegetables, then pour in the bone broth. Bring to a boil before reducing the heat to low, letting it simmer for 10 minutes.

4)Fold in both the creamy mashed potatoes and the reserved cubed potatoes. Simmer for another 5 minutes until the flavors meld beautifully together.

5)Finally, stir in the sour cream until well blended, then remove from heat. The soup should be rich and creamy!

6)Serve hot, sprinkling fresh cracked pepper, chopped parsley, and green onions on top for a colorful finish.
