Carrot Cake Recipe

2 c. flour
2 c. sugar
3/4 c vegetable oil
4 eggs
2 c finely grated carrots
1 t salt
2 t baking soda
2 t baking powder
2 t cinnamon
2 t vanilla
1 small can crushed pineapple (drained)
1 c chopped or ground nuts (floured lightly)
1 c coconut flakes (optional)
Icing - 1 large package cream sheese, 1 c butter & 1 package powder sugar

Mix ingredients in order given with mixer. Add and fold in by hand nuts and coconut. Pour into large angel food or bundt cake pan - sprayed & floured. Bake at 350 for 50-60 minutes. Remove from pan when cooled. Frost with cream cheese frosting.
