1/3 cup olive oil
1 onion, diced
5 scallions, diced
3 large cloves garlic, minced
1/4 bunch fresh dill, chopped
1/4 bunch fresh parsley, chopped
1 T tomato paste
1/4 tsp red pepper flakes, optional
1/2 large savoy cabbage, sliced thin
2 cups vegetable broth
salt and pepper
1/2 cup medium grain rice, rinsed
2 cups water
4 ounces feta cheese

Directions:
Directions:
In a large pot, heat up olive oil and saute' the onions , scallions and garlic until
translucent, 3 minutes. Mix in herbs for 30 seconds. Add in tomato paste and chilli flakes.

Transfer cabbage to the pot and season with salt and pepper. Pour in broth, stir. Bring to a boil and lower heat to simmer. Cover pot and cook for 10 minutes, stirring occasionally, until cabbage is almost tender.

Add in the rice and 2 cups water. Combine. Bring to a boil, lower heat to simmer and cover again. Cook until rice is done (should be about 15 minutes), stirring occasionally.

Remove from heat and stir in cheese.
