Ingredients:
Ingredients:
1/2 cup Unsalted Butter, softened (1 stick)
1 Piloncillo Cone
2 large Eggs
3/4 cup Grandma's Unsulfured Molasses
1/4 cup Milk
1 1/2 teaspoons Vanilla Extract (Mexican preferred)
5 cups All-Purpose Flour
2 teaspoons Ground Ginger
1 1/2 teaspoons Baking Soda
1 1/2 teaspoons Ground Cinnamon

Directions:
Directions:
1. Melt Piloncillo on low to medium heat with about a half cup of water until fully broken down. Let cool.

2. Preheat the oven to 350° F. Line cookie sheets with parchment paper and set aside.

3. In the bowl of a stand mixer (handmixer will work just as well), cream butter until smooth. Add the melted piloncillo and mix until well combined. Add in one egg, molasses, milk and vanilla extract. Mix together until smooth.

4. In a separate bowl, add the flour, ginger, baking soda and cinnamon. Mix together to combine.

5. Add the dry ingredients into the wet ingredients 1 cup at a time and mix until well combined. The dough should cleanly pull away from the mixing bowl.

6. Transfer the dough onto a lightly floured surface and roll out to 3/8 inch thickness (or a little less than 1/2 inch). Use a pig shaped cookie cutter (or use whatever shapes you want as long as you have fun). Place the piggies 1 1/2 inches apart on the prepared baking sheets.

7. In a small bowl, crack open the remaining egg and whisk. Brush the beaten egg over the tops of the pigs using a pastry brush.

8. Bake in oven at 350° F for about 10-12 minutes. Depending on size of cookie, bake time may be less.

9. Let cool and enjoy!

Personal Notes:
I learned how to make these cookies because they were my dad's favorite!

These marranitos are easy to make and fun to eat. I love the piggies but I really love the elephantes more. I make them in different shapes and sizes so don't be afraid to get creative. Enjoy! Love, Nicky <3
