1 1/2 c. long grain white rice
1/4 c. butter
1 tsp. garlic, minced (~2 cloves)
1/4 c. onion, finely diced
1/2 c. (4 oz.) tomato sauce, or 2 puréed tomatoes
2 tsp. tomato bouillon granules, or chicken
1/2 tsp. salt
1 Tbsp. chili powder
1 tsp. cumin
1 carrot, diced small
1/2 c. peas
1 3/4-3 cups water, or chicken stock (depending on what kind of rice used)
1-3 whole Serrano peppers, diced (optional)

Directions:

1. Rinse rice.
2. In a large saucepan over medium heat, add butter, then rice, cook and stir frequently, until lightly browned.
3. Add tomato sauce, garlic and onion and stir. Add bouillon, salt, carrots, peas and Serrano (if using).
4. Bring to a boil, reduce heat to low and cover. Cook about 20 minutes, until liquid is absorbed. Remove from heat and let sit 5 minutes. Then fluff with fork.
