One bottle any dark beer
1/4 cup soy sauce
Two cloves of garlic
1 teaspoon ground cumin
1 teaspoon chili powder
1 teaspoon hot pepper sauce
4 beef bottom sirloin steaks approximately 4 - 6 ounces each
Salt and pepper to taste
Red green and yellow bell pepper cut lengthwise into quarters and seeded
Salsa
Flour, tortillas, optional
Lime wedges
Salsa:
2 cups coarsely, chopped seated tomatoes
2 green onions with tops sliced
1 clove, garlic, minced
1-2 teaspoons minced seeded, jalapeņo pepper
1 tablespoon olive oil or vegetable oil
2 to 3 teaspoons lime juice
8 to 10 sprigs, fresh cilantro, minced
1/2 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon black pepper

For the beef
Combine beer, soy sauce, garlic, cumin, chili powder, and hot pepper sauce in a large shallow glass dish. Add beef; cover dish. Marinate in the refrigerator up to 12 hours, turning beef several times. Remove beef from marinade, discard marinade. Season with salt and pepper. Oil hot grill to help prevent sticking. Grill beef and peppers uncovered on grill over medium heat 8 -12 minutes, turning once. Beef should be medium done and peppers tender. Serve with salsa, tortillas if desired and lime.
For salsa:
Combine tomatoes, green onions, garlic, jalapeņo pepper, oil, and lime juice in a medium bowl. Stir in cilantro. Season with salt, sugar and black pepper. Adjust seasoning to taste, adding lime juice or jalapeņo pepper if desired.
