1 15.2 box cake mix
2 cups cold water, divided
1/2 cup vegetable oil
3 large eggs
1 (3 ounce) package flavored gelatin
1 cup boiling water
1/2 cup fruit for garnish

Icing:
2/3 cup white chocolate chips
1 1/2 cup heavy whipping cream
1 tsp vanilla

Directions:
Preheat oven to 350 degrees. Spray 13 x 9 inch pan. Place cake mix in bowl. Whisk together 1 cup cold water, oil and eggs. Add to cake mix, mixing well. Pour batter into prepared pan and bake according to package. Let cool on wire rack 30 minutes. While cake is cooling, dissolve gelatin in one cup boiling water. Stir in one cup cold water. Prick cake with toothpick and pour gelatin over cake. Cover and chill 6-12 hours.

Icing:
Place chocolate chips in heatproof bowl. Microwave 1/2 cup heavy cream for 30 seconds to one minute (just until steaming but not boiling). Pour cream over chips and stir well to melt chocolate. Cover and chill 6-12 hours. After chilling, combine chocolate mixture with remaining 1 cup heavy cream and vanilla. Mix with whisk attachment until heavy peaks form (about 2-4 minutes). Spread over cooled cake and garnish with fruit.
