1 cup yellow cornmeal (stone-ground if you can)
1 cup all-purpose flour
1 tbsp sugar (optional — leave out for very traditional)
1 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup buttermilk
2 large eggs
1/4 cup melted butter (or bacon grease for true farmhouse flavor)
2 tbsp bacon grease or butter (for the skillet) *We always save our bacon grease for this reason.*

1. Preheat oven to 425°F. Put your cast iron skillet in the oven while it heats — this is the secret to that golden crust.
2. In a large bowl, whisk together the cornmeal, flour, sugar (if using), baking powder, baking soda, and salt.
3. In a separate bowl, mix the buttermilk, eggs, and melted butter.
4. Pour the wet ingredients into the dry and stir just until combined. Don’t overmix — a few lumps are fine.
5. Carefully remove the hot skillet from the oven. Add the bacon grease or butter and swirl to coat the bottom and sides.
6. Immediately pour the batter into the sizzling skillet. You should hear a happy little sizzle — that’s how you know it’s right.
7. Return to oven and bake 18–22 minutes, until the top is golden and a knife in the center comes out clean.
8. Let rest 5 minutes, then slice and serve warm with butter or honey.
