1 egg, lightly beaten
1/2 cup finely chopped green onion
8 oz Vegetable Cream Cheese Spread
1 cup crumbled Feta cheese
10 oz frozen spinach, thawed, drained
9 sheets frozen phyllo dough, thawed
1/3 cup butter, melted or cooking spray

Mix the egg, onion, cream cheese spread, feta cheese and spinach until well blended. Set aside.
While working on one log, place any remaining phyllo sheets between plastic wrap and set them aside. Otherwise, they'll dry out and get very hard to handle.

To make one of the cheese logs:
Place 1 of the phyllo sheets on a clean work surface. Brush it with butter or spray it with cooking spray on its top. Lay another sheet on top of it; again brush it with butter or spray it with cooking spray on its top.
Repeat this until you have 3 sheets layered together, thus making a stack.
Spread 1/3 of the spinach mixture along one end of the phyllo stack in the center, leaving about a 1 inch border on the sides.
Fold in both sides of the phyllo, then roll up to make a log.

Repeat this process with the remaining phyllo sheets and spinach mixture to make 2 more logs.
Brush the logs with the remaining butter or spray them with additional cooking spray.
To prevent the phyllo from cracking while baking, score the logs at 1-inch intervals.
Place the logs seam sides down, on an ungreased baking sheet.
Bake them at 375 for 25 minutes or until they're golden brown.
Cool them for 5 minutes.
Place them on a cutting board and cut each log into 10 slices with a serrated knife to serve.

Leftover phyllo sheets can be wrapped tightly in plastic wrap and refrozen.
