3 cups marinara
16 no boil lasagna noodles
15 oz. container ricotta
2 cups parmesan, divided
8 ounces mozzarella
2 large eggs
1 tsp salt
1/2 tsp pepper
2 T fresh chopped parsley or 2 1/2 tsp dry parsley

Directions:
Directions:
Pour one inch boiling water into a large casserole. Add dry noodles, a few at a time, and soak until pliable (5 minutes). Remove to single layer. Mix together ricotta, 1 cup parmesan, mozzarella, eggs, salt, pepper and parsley to create filling. Spread 1 1/2 cups sauce on bottom of casserole. Scoop 1/4 cup cheese filling on short end of each lasagna noodle. Roll up noodle. Place all sixteen rolls into casserole dish. Cover with remaining sauce. Cover. Bake 375 degrees for 40 minutes. Remove foil. Sprinkle with remaining parmesan and bake an additional 5 minutes. Let rest 10 minutes before serving.
