• 1 cup gluten-free rolled oats (or oat flour for smoother texture)
• ½ cup natural almond butter (or cashew butter)
• ⅓ cup plant-based protein powder (pea or pumpkin seed protein works best)
• 2 Tbsp ground flaxseed or chia seeds
• 2 Tbsp unsweetened shredded coconut
• 2–3 Tbsp pure maple syrup or raw honey substitute like date syrup
• 1 tsp vanilla extract
• Ό tsp sea salt
• 1–3 Tbsp unsweetened almond milk (as needed for texture)

Optional add-ins (choose 1–2):
• Mini dairy-free dark chocolate chips
• Cacao nibs
• Cinnamon
• Finely chopped nuts or seeds

• Store in an airtight container
• Fridge: up to 7 days
• Freezer: up to 2 months

1. In a medium bowl, mix oats, protein powder, flaxseed, coconut, and salt.
2. Add almond butter, maple syrup, and vanilla. Stir until combined.
3. Add almond milk 1 tablespoon at a time until dough holds together.
4. Roll into 1-inch balls.
5. Chill in the fridge for 20–30 minutes to firm up.
