1 cup sifted all-purpose flour
¼ teaspoon salt
½ teaspoon cream of tartar
¾ teaspoon baking powder
⅓ cup water
⅓ cup lemon juice
3–4 tablespoons grated lemon rind
2 tablespoons melted butter or margarine
¼ cup sugar
1 egg
⅛ teaspoon vanilla extract
1 tablespoon sugar (for topping)

Directions:
Directions:
Sift together flour, salt, cream of tartar, and baking powder.
Combine lemon juice with half of the grated lemon rind.
Cream butter thoroughly; gradually add ¼ cup sugar and beat until fluffy.
Add egg and vanilla; beat well.
Add liquid mixture to dry ingredients and blend well.
Drop batter into greased and floured muffin pans.
Sprinkle tops with remaining tablespoons of sugar.
Bake at 375°F for about 15 minutes.
