2 Tbsp shortening or lard
½ cup sugar
½ tsp salt
2 eggs
1 cup water OR sour milk
1 tsp baking soda (use with sour milk)
3 tsp baking powder (use with water)
2 cups flour
1 cup cornmeal

Directions:
Directions:
Preheat the oven to 375°F. Grease a 9-inch square baking pan or cast-iron skillet.
Cream shortening and sugar together.
Add eggs and beat well.
Stir in liquid (water or sour milk).
In a separate bowl, combine dry ingredients, using baking soda if using sour milk or baking powder if using water.
Add dry ingredients to wet ingredients and mix just until combined.
Pour batter into the prepared pan and spread evenly.
Bake 30–35 minutes, or until golden and a toothpick inserted in the center comes out clean.
Cool slightly before serving.
