3/4 cup parboiled rice (Uncle Ben’s)
1 celery stalk
1 green bell pepper
2 garlic cloves
4 green onions
16-20 large shrimp
3 Tblsp Cajun seasoning
14 1/2 oz diced tomatoes

Directions:
- Bring rice with 1 1/2 cups of water to a boil. Reduce heat to low, cover and cook until tender (18/20 min)

-Cut celery into 1/4 in slices

-Cut green peppers into 1/4 in pieces

-Mince garlic

-Slice green onions on an angle (seperate white from green)

-Season shrimp with 2 tsp of Cajun seasoning

-Heat 2 tsp of olive oil in non-stick pan over medium high heat. Add shrimp to hot pan and sear on one side, 2-3 min. Remove shrimp to a plate and reserve pan, don’t wipe (shrimp will finish cooking in a later step)

-Add 2 tsp olive oil to same pan used to cook shrimp. Reduce heat to medium and add celery and green peppers. Cook until tender 4 min , add garlic and white portion of green onions and 1 tsp Cajun seasoning cook 1 minute.

-Add diced tomatoes, bring to boil, then reduce heat to low and cook 2 min (sauce should be chunky and slightly saucy, if needed add up to 2 Tblsp of water)

-Add shrimp to tomato sauce nestling into sauce 3-4 min. Remove from burner

- Place rice in center of bowl and spoon shrimp and tomato sauce around rice. Garnish with green portion of green onions.
