Ingredients: 2 fresh pompano fillets with skin intact tablespoons rich extra virgin olive oil 4 cloves fresh garlic, thinly sliced 6 sprigs fresh thyme 1 teaspoon coarse kosher salt 1/2 teaspoon freshly cracked black pepper 2 tablespoons unsalted butter, chilled 1 tablespoon fresh lemon juice 2 tablespoons chopped fresh parsley

Directions:Pat dry pompano fillets thoroughly with paper towels.Season both sides evenly with kosher salt and cracked black pepper. Heat olive oil in large skillet over medium-high heat until shimmering, about 2 minutes. Place fillets skin-side down in hot oil. They should sizzle immediately. Press gently with spatula for 30 seconds to ensure even skin contact. Cook undisturbed for 4 minutes until skin is golden brown and crispy. Flip fillets carefully using thin spatula. Add sliced garlic and thyme sprigs to oil around fish. Cook flesh side for 2 minutes until garlic is fragrant but not browned. Add chilled butter to skillet, tilting pan to melt evenly. Baste fish continuously with buttery sauce for 1 minute using spoon. Remove skillet from heat; drizzle with fresh lemon juice. Sprinkle chopped parsley over fillets and serve. |
